French Onion Soup with Bone Broth — Rich & Nourishing | NourishYourself

Prep Time: 10 min | Cook Time: 60 min | Serves: 4 The Story The secret to great French onion soup is time — and a great broth. NourishYourself bone broth brings the mineral depth that makes this bistro classic sing, without needing a restaurant kitchen. Ingredients 1L NourishYourself Beef Bone Broth 4 large yellow onions, thinly sliced 3 tbsp butter 1 tbsp olive oil 1 tsp fresh thyme ½ cup dry white wine or dry sherry Salt and pepper to taste 4 thick slices sourdough bread, toasted 1½ cups gruyère, grated Method Melt butter and oil in a heavy pot over medium-low heat. Add onions and a pinch of salt. Cook, stirring occasionally, for 45 minutes until deeply golden and caramelized. Add thyme and wine. Cook 3 minutes until wine reduces. Pour in bone broth. Simmer 15 minutes. Season to taste. Ladle into oven-safe bowls. Top with toasted sourdough and a generous handful of gruyère. Broil 3–4 minutes until cheese is bubbling and golden. Why This Works The gelatin in bone broth gives this soup a luxurious body that water-based stocks simply can't match.
