Ingredients 1kg ripe tomatoes, halved 1 head garlic, top sliced off 1 medium onion, quartered 3 tbsp olive oil Salt and pepper 500ml NourishYourself Beef Bone Broth ¼ cup heavy cream (optional) Large handful fresh basil 1 tsp balsamic vinegar Method Preheat oven to 400°F. Arrange tomatoes, onion, and garlic on a baking sheet. Drizzle with olive oil, season generously. Roast 35–40 minutes until caramelized. Squeeze roasted garlic cloves out of their skins. Transfer everything to a blender with bone broth and basil. Blend until smooth. Pour into a pot and warm over medium heat. Stir in cream if using, and balsamic vinegar. Adjust seasoning.
